One pot meals are often easy to cook & also inexpensive. It’s basically gather all ingredients (mostly already available from the pantry), mix it all up & serve. I cooked an easy & cheap one pot dinner tonight. Apologies for not taking a photo, eating got in the way.
500g chicken breast, diced
1 onion, diced
2 tbsp olive oil
1 tsp curry powder
1 can chopped tomatoes (or fresh if you prefer)
2 cans baked beans in tomato sauce (APC brand recommended or any beans type beans will do)
salt & pepper to taste
crusty bread to serve
1. Heat the olive oil then add the onion & the curry powder. Stir until onions are cooked.
2. Add the chicken pieces. Stir so it doesn’t burn. Cook until a little bit brown.
3. Add the chopped tomatoes. Make sure the chicken is cooked through.
4. Add the 2 cans of beans. Stir & simmer.
5. Salt & pepper to taste.
Serve hot with crusty bread on the side. Enjoy!
*This was enough for a dinner (we both had two bowls) and lunch for the next day.
